Peanut Butter Blondies with Peanut Butter Filled Chocolate Chips

These Peanut Butter Blondies are absolutely, positively, without a doubt, the best I have ever made! I saw some new peanut butter filled chocolate chips at the grocery store and I just had to give them a try. It’s amazing what a tiny shot of peanut butter in the middle of a chocolate chip can do. Each tiny morsel is packed with flavor. I’m so glad I tried them in my blondies. The next time I need a quick and easy dessert for company, I’m going to make these and serve them warm with a scoop of chocolate ice cream.

Made with brown sugar and peanut butter these blondies are extra moist. I baked them until they were set and checked them with a toothpick halfway between the center and side of the pan. That’s my little trick to make sure I don’t over bake them. I do the same when I make brownies. They do continue baking a little more after they are out of the oven. I would advise you to allow them to cool completely before cutting. They are soft and they are almost a little gooey, because the chips are soft. Not a problem for me!

Peanut Butter Blondies with Peanut Butter Filled Chocolate Chips

Ingredients:Peanut Butter  Blondies with Peanut Butter Filled Chocolate Chips

1 1/2 Cups packed brown sugar
1/2 Cup butter, softened

1 Cup peanut butter

2 tsp. vanilla

3 eggs
1 1/2 Cups unbleached all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 bag (9 oz) milk chocolate morsels with peanut butter filling

Directions:

Preheat oven to 350°F. Grease a 9×13 pan with shortening or baking spray.

Put brown sugar and butter in a large mixer bowl. Beat with mixer until light and fluffy.
Beat in peanut butter, eggs, and vanilla.
Stir in flour and baking powder, then stir in chocolate morsels.
Spread in pan.

Bake about 30 minutes, don’t overbake. The blondies should just be set and lightly browned.
Cool completely on a rack, before cutting into 24 pieces.

    • Hi Jane, thank you for drawing that to my attention. I have added the 1 Cup of peanut butter to the recipe. We just made some changes in the site and this was the first post, I was having to correct the font and font size, guess I messed up a little. Now my spacing is wrong, but it may just have to stay that way. I love to cook but I’m technically challenged when it comes to computers. I’ll learn….
