With the holidays fast approaching, sometimes we need a cookie recipe that tastes great and is quick and easy. This is one of those recipes, keep it handy to pull out, you’ll be glad you have it. These are so easy, you can have other cookies in the oven and at the same time make these. Terri posted a recipe last Thursday that is also quick and easy. Her Butterscotch Crunchies and this recipe are two that can really save you time.
When I make up a plate of Christmas cookies to take somewhere, I like to have a variety of shapes, sizes and colors. These date balls can be rolled in any color sprinkles you desire. They are also pretty rolled in coconut or powdered sugar…Your Choice!!
These are so easy, there is not much advice I can give you. Just make sure your dates are chopped well and are fresh Be careful not to overcook the date mixture, one minute of cooking is plenty of time.
Date Nut Crispie Balls
1 (8 ounce) package whole pitted dates
3/4 C sugar
1/2 C butter
2 1/2 C crisp rice cereal
1 C pecans, chopped
Sprinkles, coconut or powdered sugar (for rolling balls in)
Chop dates. Combine dates, sugar and butter in a medium saucepan. Bring to a boil, stirring constantly and cook for 1 minute.
Remove from heat and stir in pecans and cereal. Let cool enough to touch.
Shape into 1 inch balls (I used my 2 tsp cookie scoop for this) then roll balls into desired sprinkles, coconut or powdered sugar.
