This bread is very moist and full of fruit. The glaze is out of this world!! I’m really not sure if it’s a quick bread or cake. Does it matter? It’s not as sweet as most cakes, it is sturdier and it is baked in a loaf pan, so I’ll go with quick bread. The other day, I had 4 very ripe bananas on the counter, the recipe just needed 2 bananas for a loaf, so I doubled the whole recipe and made two loaves. Glad I did, friends were over and one loaf disappeared!
Recipe titles can be hard. I couldn’t think of any other way to describe this recipe, because I wanted to emphasize that there are options on how you bake it. I was in the mood to experiment, wanting to see what would work best. I’ve made this recipe as regular fruitcake in the past, but for many, fruitcake seems to have become a dirty word… there’s just too many jokes about it. Besides that, I am not sure that this really is a fruitcake. It has plenty of fruit, nuts and rum, but it also has plenty of cake, and the cake is nice and soft. Such a dilemma…what to call it? Apples, sweet potatoes and brown sugar are a combination that just works so well together. I make it for Thanksgiving without fail and I often make it for Christmas, New Years and Easter. If I’m making turkey or ham, I automatically think about making my sweet potatoes this way. Continue reading

Salted Caramel Turtle Bars are a traditional favorite that I always make at Christmas. I’ve just updated them this year because I love salted caramel so much. I had to try it and am really glad I did. The salt really brings out the caramel flavor.
These little cookie cups will put you in German Chocolate Cake heaven. The German Chocolate Frosting fills each cup perfectly. The cups are soft, almost like a brownie and will make a great addition to any cookie plate. I think they are one of the cutest treats I’ve made in ages.
PUMPKIN! I don’t think there is anything that shouts FALL! any louder…. Could you hear that? With the beautiful leaves falling to the ground and chilly nighttime temperatures, it must be pumpkin time. I’m sure I’ll make these more than once before the season passes. They are perfect to take to friends or to a potluck. I have yet to know anyone that doesn’t like them. I have already promised my Mom some, they are her favorite.
