Orange, pineapple and banana blend together and make a great tropical fruit quick bread. Moist and tender, this bread is my favorite to go with chicken salad. We eat a big variety of salads in the summer and it goes great with just about all of them. Maybe too good, I keep having to make double batches!
I have a serious weakness for fruit of all kinds. This fruit salad is one of the best ways to enjoy fruit, anytime of the year. It is a great salad for potlucks, holidays and family get togethers, I call it the perfect, any occasion, recipe.
This bread is very moist and full of fruit. The glaze is out of this world!! I’m really not sure if it’s a quick bread or cake. Does it matter? It’s not as sweet as most cakes, it is sturdier and it is baked in a loaf pan, so I’ll go with quick bread. The other day, I had 4 very ripe bananas on the counter, the recipe just needed 2 bananas for a loaf, so I doubled the whole recipe and made two loaves. Glad I did, friends were over and one loaf disappeared!
This Sweet and Sour Sauce with Pineapple is perfect. It has the right balance of sweet to sour plus the pineapple and red pepper give it a lot of flavor. I’m not a fan of the gooey, syrupy, sweet commercial sauces they try to call sweet and sour.
